White Chicken Chili

Ingredients
  • 32 oz low sodium chicken broth
  • 16 oz boneless, chicken breasts
  • 15 oz can cannellini beans
  • 15 oz can no salt added black beans
  • 16 Oz. salsa verde
  • 2 tsp ground cumin
  • 2-3 Tbsp corn starch
Instructions
  1. Combine all ingredients in slow cooker.
  2. Cook on high for 4 hours, or low for 6 hours, until chicken is cooked through. Shred chicken with a fork and return to slow cooker. Mix well.
  3. Serve with desired toppings.

  • cilantro

  • green onion
  • crumbled tortilla chips
  • avocado
  • bread

Comfort Food Recipe – Chili

Chili
Ingredients
  • 2 tsp. Oil
  • 2 Onions, chopped
  • 3 Cloves Garlic, minced
  • 1 Lb. Lean Ground Beef
  • 3/4 Lb. Beef Sirloin, cubed
  • 14 Oz. Can Diced Tomatoes
  • 1 Can Dark Beer
  • 1 Cup Strong Coffee
  • 12 Oz. Can Tomato Paste
  • 1 Can Beef Broth
  • 1/2 Cup Brown Sugar
  • 3 1/2 Tbsp Chili Sauce
  • 1 Tbsp Cumin
  • 1 Tbsp Cocoa
  • 1 tsp. Oregano
  • 1 tsp. Cayenne
  • 1 tsp. Coriander
  • 1 tsp. Salt
  • 4 Cans (15 Oz.) Kidney Beans
  • 4 Chili Peppers, chopped
Instructions
  1. Heat oil.
  2. Cook onions, garlic and meat until browned.
  3. Add tomatoes, beer, coffee, tomato paste and beef broth.
  4. Add brown sugar, spices, 2 cans of kidney beans and peppers; mix well.
  5. Reduce heat and simmer for 1 1/2 hours.
  6. Add remaining 2 cans of kidney beans and simmer for another 30 minutes.
